Housed in a 19th-century building, Cave Constantin-Comby is nestled in a narrow street in Chamoson. The estate is managed by Fabienne Constantin-Comby and her husband Michel, both of whom changed careers to pursue winemaking. They are pioneers in Valais for using amphorae (giant concrete eggs) for vinification, a method that enhances the freshness and finesse of their wines, such as Johannisberg and Humagne Blanche. The couple combines tradition with bold innovation.
