Sican Chocolate Factory Farmer and Chocolatier

Sican chocolate is an authentic Criollo (non-GMO) that guarantees the harvest of the bean through to the production of the couverture on the lands of Bátan Grande. Our desire is to preserve the ancestral know-how of the Bátan Grande community, to fairly remunerate each actor in cocoa production, and to recreate the region's original biodiversity by promoting cocoa cultivation.
Thirty farming families reserve part of their land for cocoa cultivation. At the same time, Juan Castillo has built a cocoa factory, including areas for fermentation, drying, roasting, pressing, and conching. Conching gives the chocolate its aroma and smoothness on the palate. Depending on customer demand, the conching time can be extended to up to 72 hours to obtain a Grand Cru chocolate with a smoothness of 10 microns.
