Located in the upper Blenio Valley, it produces high-quality products while respecting the environment.
The Marchi family's organic farm is an example of tradition and innovation.
It offers authentic experiences, such as guided tours and tastings, to bring visitors closer to rural life.
During the summer, the Marchi farm's cows graze freely on the mountain pastures, enjoying lush meadows and fresh air.
This natural environment promotes their well-being and contributes to the production of high-quality milk.
The rich and varied diet of alpine herbs is reflected in the unique flavors of the cheeses produced, enhancing the farm's dairy tradition.
Giampaolo Marchi, his wife Hedi Roth, their children Andrea and Roman, and his brother Vittorio are co-owners of the organic farm "Töira," located in Olivone on the main road leading to the Lucomagno Pass.
It is a medium-sized mountain farm with 25 dairy cows, 10 heifers, and 8 calves.
The Töira Dairy offers its customers a wide selection of mature and fresh cheeses, yogurt, milk, and more, guaranteeing impeccable organic quality.
From September to June, Giampaolo is always available, on request, to explain and demonstrate all the stages of production.
In a friendly and welcoming environment, visitors can learn and discover everything there is to know about the production of genuine organic products.
Discover, learn, taste: the journey of milk at the Töira Dairy
The Töira Dairy offers educational activities lasting about two hours for schools, camps, and groups.
The first part focuses on mountain farming, how our farm is run, and our cows.
In the second part, we explain step by step how milk is transformed into cheese.
Of course, there will be tastings of curd, formaggella, ricotta, and many other products.
After the theory, we move on to the practical part. The children are given ready-made cheese paste from which they can form their own little bites to take home.
