What is Pacific Rim cuisine?
Hawaiian cuisine is shaped by its history. Even in Captain Cook's day, the indigenous Polynesian people used all kinds of fish, poultry, pork, potatoes, and local vegetables.
The Europeans brought their own plants with them, grew tropical fruits on plantations, and employed Chinese and Japanese workers, who in turn introduced rice, sweet and sour sauces, and Asian spices. Between 1880 and 1920, this mix of peoples developed a local cuisine that held its own even when Hawaii became the 50th state of the United States in 1959.
As chefs from all over the world worked in the big hotels in Hawaii, a competition developed among them over time to see who could best combine the diverse fish, fruits, and vegetables of the Hawaiian Islands with grills, pans, or woks, using Southeast Asian spices and sauces to create a tasty composition.
The resulting PACIFIC RIM CUISINE has been crowning the menus of restaurants in the South Seas for two decades.
Busyless Business Lunch
At lunchtime, our guests can enjoy a selection from our evening menu, combined with weekly changing wok, grill, salad, and sushi specials. Try a filet mignon center cut with homemade mashed potatoes, a surf & turf Asian delight, a Da Kine club sandwich, or one of our new burger creations. Maori is open Monday through Friday from 11:30 a.m. to 2:30 p.m. for our lunch guests.
Enjoyment at Maori
In the evening, we present our entire range of Pacific Rim cuisine. At Maori, you can enjoy Polynesian pupus (appetizers) such as pipikaula (homemade dried meat with pineapple mustard) or ahi tatar tiki stack (spicy tuna tartare on avocado beet), to name just two. Crisp salads such as the Moana Chicken Salad (with teriyaki chicken breast) , delicate tataki (raw fish in a wasabi sea salt marinade), and Maori sushi rolls await you. From Hawaiian fusion cuisine, the Macadamia Chicken (with ginger raita and pesto linguine) will enchant you. Vegetarian dishes such as pancit (Filipino noodle dish) are also an integral part of Maori cuisine. The new grill, on which juicy cuts of meat such as the Tomahawk Prime Beef (for 2 people) are prepared, is a treat for the palate. For a culinary finale, enjoy a Crème Brûlée à la Noix de Coco (specialty from Tahiti) or a fresh pineapple carpaccio with lilikoi sorbet.
Maori Pacific Bar
We serve holiday-inspired cocktail creations at the bar: TIKI drinks such as the original Trader Vic's Mai Tai or the Scorpion Bowl (for 4 people) are served in iconic tiki mugs. A selection of traditional cocktails and exquisite spirits also have their place at the Maori bar. Our wine list presents a selection of excellent, sometimes unknown wines from Europe and the New World.
