Restaurant We are happy to spoil you with selected Swiss specialties: - Tarte flambée - Various cheese fondues - Raclette made from Grindelwald cheese We are open for you from Tuesday to Saturday. Hot meals served continuously from 12:15 p.m. until 9:00 p.m. On Tuesdays we do not open the restaurant until 6:00 p.m. For groups we are happy to fulfill culinary wishes upon prior reservation, e.g. family events, birthdays, business lunches, etc. INFORMATION Hotel Parking spaces available for CHF 5.00 per day Extensive breakfast buffet Free WiFi in the public areas Elevator Pets allowed (for an additional charge) Reduced entry to the sports center with indoor pool, ice rink and much more Sauna area included in the room price in winter from 2 nights and in summer from 7 nights. At the age of fourteen and a half, he began working alongside his father, creating his first wine, “La Feuillette.” This was the beginning of a passion that would shape his entire life. Jean-Michel refined his expertise by working in several prestigious estates around the world, notably in France, Italy, and the United States. Among the estates that benefited from his expertise are Château Pape Clément, La Tour Carnet, and Robert Mondavi’s estate in California. These international experiences allowed him to develop a deep mastery of different winemaking techniques. Philosophy and Winemaking Methods : Jean-Michel is a perfectionist who places quality above all else. He is the only one to craft his wines according to a rigorous and traditional method, favoring micro-vinification and unique artisanal techniques. He is particularly recognized for his refusal to use modern materials such as stainless steel, preferring ancestral practices such as aging in carefully selected wooden barrels. Every detail of winemaking is handled by Jean-Michel himself, from the manual harvesting of grapes to the prolonged aging in barrels. The Winemaking Process : • Grapes are hand-harvested and cooled before vinification to preserve their aromas. • Fermentation is carefully controlled, often in special tanks such as the spherical “Galiléo.” • Barrel aging, sometimes for more than two years, develops complex aromas and a silky texture. • No chemicals or modern techniques are used, ensuring purity and authenticity. Exceptional Wines : Among Jean-Michel’s most remarkable creations are wines such as “Mon Chéri,” “Le Délice de Camille,” and “Ma Mère M’a Dit.” Each of these wines is crafted with particular attention to detail and deep respect for viticultural tradition. Jean-Michel was also a pioneer in introducing Malbec to Switzerland, creating unique blends often ranked among the best in the world. Distinctions and Awards : Jean-Michel has received more than sixty awards for his wines, including several distinctions for the world’s best Chardonnay, the best Swiss white wine, and the world’s best Merlot. His wines are regularly compared to the greatest international vintages and are often judged superior in blind tastings. Philosophy of Life : Jean-Michel does not seek quantity, but excellence and rarity. For him, wine is a luxury to be fully savored, a work of art destined for an elite who knows how to appreciate fine wine and fine food.
