Born in Switzerland, Jean-Michel grew up in a family deeply rooted in viticultural tradition. At the age of fourteen and a half, he began working alongside his father, creating his first wine, “La Feuillette.” This was the beginning of a passion that would shape his entire life. Jean-Michel refined his expertise by working in several prestigious estates around the world, notably in France, Italy, and the United States. Among the estates that benefited from his expertise are Château Pape Clément, La Tour Carnet, and Robert Mondavi’s estate in California. The Winemaking Process : • Grapes are hand-harvested and cooled before vinification to preserve their aromas. • Fermentation is carefully controlled, often in special tanks such as the spherical “Galiléo.” • Barrel aging, sometimes for more than two years, develops complex aromas and a silky texture. • No chemicals or modern techniques are used, ensuring purity and authenticity. Exceptional Wines : Among Jean-Michel’s most remarkable creations are wines such as “Mon Chéri,” “Le Délice de Camille,” and “Ma Mère M’a Dit.” Each of these wines is crafted with particular attention to detail and deep respect for viticultural tradition.
