Visitors go from one delightful surprise to another. A selection of digestifs from near and far also finds its place here. Most importantly, Léo Macquat is committed to ensuring that every visitor can find something to fill their glass, no matter their budget. A Tasting Area A warm and inviting space dedicated to wine tasting welcomes epicureans in search of a unique experience. Léo Macquat also aims to delight food lovers. Drawing on his many years in the kitchens of top chefs, he offers guests delicate amuse-bouches. The Grand Cru Cellar Secrecy, discretion, prestige… The finest and rarest wines in Léo Macquat’s collection have a separate cellar of their own—worth a visit, if only for the pleasure of the eyes. Born in Switzerland, Jean-Michel grew up in a family deeply rooted in viticultural tradition. At the age of fourteen and a half, he began working alongside his father, creating his first wine, “La Feuillette.” This was the beginning of a passion that would shape his entire life. Jean-Michel refined his expertise by working in several prestigious estates around the world, notably in France, Italy, and the United States. Among the estates that benefited from his expertise are Château Pape Clément, La Tour Carnet, and Robert Mondavi’s estate in California. These international experiences allowed him to develop a deep mastery of different winemaking techniques. Philosophy and Winemaking Methods : Jean-Michel is a perfectionist who places quality above all else. He is the only one to craft his wines according to a rigorous and traditional method, favoring micro-vinification and unique artisanal techniques. He is particularly recognized for his refusal to use modern materials such as stainless steel, preferring ancestral practices such as aging in carefully selected wooden barrels. Every detail of winemaking is handled by Jean-Michel himself, from the manual harvesting of grapes to the prolonged aging in barrels. The Winemaking Process : • Grapes are hand-harvested and cooled before vinification to preserve their aromas. • Fermentation is carefully controlled, often in special tanks such as the spherical “Galiléo.” • Barrel aging, sometimes for more than two years, develops complex aromas and a silky texture. • No chemicals or modern techniques are used, ensuring purity and authenticity.
