Bin mir nicht sicher ob das Brot wie Backwaren am Sonntag auch immer frisch ist und nicht tiefgekühlt war ! Ich habe schon öfters erlebt das sich die Rinde beim Brot vom Teig lösste im Kern des Brotes der Teig ganz andere Strukturen hatte als Richtung Brotrinde.
