The Cave à la Cornalle , led by Philippe Rouge , is a true winemaking treasure located in Epesses , in the heart of the terraced vineyards of Lavaux , a UNESCO World Heritage site. The Rouge family , established in Epesses since 1553 , has been preserving and passing down its winemaking expertise from generation to generation. The estate spans 4.8 hectares , cultivated under integrated production , in full respect of tradition and the local terroir. The vineyards stretch across several prestigious appellations: St-Saphorin , Epesses , Calamin , and Dézaley , offering a unique diversity at the heart of Lavaux. The estate’s specialty is Chasselas , the iconic white grape variety that represents 80% of the total production. This wine pairs perfectly with the vineyard’s clay-rich soils , revealing finesse, minerality, and authenticity. The harvests are vinified in the modern La Cornalle cellar , built in 1992 above the village of Epesses. Equipped according to the latest technical standards, this facility ensures precise control of fermentation temperatures , guaranteeing wines of great purity and exceptional quality. In addition to Chasselas, the estate also produces red wines , including Pinot Noir and various blends featuring Cabernet , Garanoir , Gamaret , and Galotta , as well as rosé wines , all crafted with passion, precision, and a deep respect for the terroir. The family estate The estate is about 9 hectares and consists of vines that are both owned and rented out, under the appellations “Perroy”, “Mont sur Rolle” and “Féchy”. The “chasselas” is in the majority (60%), growing alongside numerous specialities such as “sauvignon blanc”, “pinot gris”, “viognier”, “cabernet sauvignon” and “merlot”. In our cellars you can find this diversity in fourteen different vintages. Harvesting is done by hand in order to guarantee quality work. The wine, from the producer to the consumer, is a guarantee of its origin and authenticity. Bonjour, J'ai trouvé chez Daniel Bovy et son fils Xavier tout d'abord des vignerons passionnés par leur métier et une large gamme de vins top au niveau qualité à des prix abordables, que ce soit au niveau blanc, rouge ainsi que le tartegnin rosé ! Je ne peux que vous recommander une petite dégustation sur leur terrasse ombragée avec une vue imprenable sur le lac Léman. Vous dégusterez un excellent chasselas et chasselas sur lie ainsi que quelques autres spécialités. En ce qui concerne les vins rouges pour un repas, je ne peux que vous recommander le Désir-Noir (mariage de cépages Gamaret, Garanoir, Pinot Noir) ainsi que le Dornfelder, un peu plus charpenté, (cépage originaire d'Allemagne).
